{Gluten-Free & Vegan} Chocolate Peanut Butter Nut & Seed Bars

adapted from 86 Lemons which was previously adapted from Vegan Heartland

1 1/2 cups organic rolled oats (gluten-free)

1/4 cup LSA (Linseed, Sunflower, Almond)

1/4 cup chia seeds

1/2 cup organic quinoa puffs

1/3 cup pumpkin seeds

1/2 cup cashews

1/2 cup macadamia nuts

1/2 cup almonds

1/2 cup agave nectar

1 cup organic peanut butter

1/2 cup chopped vegan chocolate

This is a super easy recipe with no cooking involved, and raw if you use the right ingredients. You literally just stir everything together using any ingredients you wish or happen to have on hand, flatten in a container lined with baking paper to make it easy to lift out, refrigerate over night or freeze for an hour or so until firm (I did a combination of both as I tried the fridge and became a bit impatient), and then cut them into bars. This makes heaps so best to keep in freezer or make a smaller batch depending on how many you think you can eat.

My little helper enjoyed eating the nuts and seeds from the plate and reaching in to taste test the bars on the plate even though the one he ate before was obviously pretty yummy! I think Zaedyn likes these bars ūüėČ If you wanted to make them for your little ones and are worried about choking, you could always chop the nuts finer by hand or even quickly in the food processor. Zaedyn has been eating nuts for a long time and chews them very well on their own as a snack so he manages these fine.

*I love nut bars and have been wanting to make these for a long time. They are so yummy, but I think I would make them without the chocolate next time as I had planned. Of course chocolate and peanut butter is yummy together together though, but I would like to make them without the chocolate and peanut butter as well or even the possibility of changing the flavour with dried fruit. We don’t usually have any dried fruit although this would be a perfect way to increase iron with some chopped dried apricots.

Raw Gluten-Free Vegan Carrot Cake

Yum! These were delicious. Raw, gluten-free, and of course vegan! I have lots left in my freezer to take out and thaw when I feel like raw carrot cake. This was a Pinterest find if you want to check out the recipe. The Sweet Life’s Raw Carrot Bites look a lot harder and smoothly cut compared to mine, but that is because I was too impatient to let them freeze long enough and was a bit quick to try them. Didn’t matter though seeing as they tasted good!

Very happy that I tried the recipe, and hope you will, too. I have not had carrot cake in a long time, but this seemed so different to anything else I had made that I was quite curious. I always tend to go for the chocolate recipes ;). I am used to raw desserts which can be a bit different sometimes and would really love to know what others think. I debated about using half the cashew icing although it really doesn’t seem like too much. Please let me know if you make these or have already made them.

We received boxes of food from Living Foods Lifestyle New Zealand and Revolution Food Co. I ordered a few new ingredients that I am excited to experiment with, and the other day we were super busy in the kitchen making Sushi Rolls, Pad Thai, & Goji Chocolate Chip Brownies with Lucuma Ice Cream. Everything was most importantly vegan as well as raw, gluten-free, and organic.

The sushi rolls were pretty easy as I utilised the raw veggies that I had prepared for the Pad Thai. The Nori sheet that I used is very different to the ones that can typically be purchased from a general supermarket. This sea superfood can be purchased from Living Foods and is another amazing product of Navitas. These Nori Sheets are raw and certified organic. A new ingredient that we have just come across is Raw Coconut Aminos.

What a great alternative to soy sauce, Bragg’s Liquid Aminos, and Nama Shoyu. We seem to love most things that have to do with coconuts, apparently even the sap now! I poured some on top of the veggies and put them aside while I made some raw almond butter. When the almonds were processed, I spread some on the seaweed, added the raw veggies and avocado, and rolled them up. Then I cut them into small sushi roll wraps for Zaedyn. I didn’t use it this time, but another handy gadget we have to make sushi is a Sushezi. Does anyone else have one of these?

Why Sushi?

Zaedyn absolutely loves seaweed. Many of you have witnessed him shoving piece after piece into his mouth. I am happy that he loves his seaweed strips so much because they are highly nutritious. The Nori sheets are even more nutritious as they are not heated and are saturated with “minerals, vitamins, antioxidants, lignans, and protein”.

To prepare the veggies, I used my spiralizer, or turning slicer. It is very easy to use and turns my veggies into “noodles” by just turning the handle. I used purple cabbage, courgettes, and carrot. You can choose from a variety of blades to make each vegetable a different spiral or cut.

Then, I rinsed my kelp noodles under filtered water. Believe it or not, this is the first time that we have ever tried kelp noodles! They are basically just a raw sea vegetable noodle made from kelp. Kelp noodles are vegan, fat-free, gluten-free, and low in carbohydrates and calories. I love that you do not have to cook these noodles, plus you get the benefits of kelp.

With my kelp noodles and vegetables mixed together, I was ready to add my sauce. I have never been a huge fan of sauces and even eat my salads with no dressing and lots of avocado, but I thought that I would try out a sauce for my pad thai. I found very similar adapted sauces which all seemed to link back to Ani Phyo. My sauce included:Kelp

-1/4 cup of raw almond butter (I make my own using raw almonds in my food processor)

-1/2 c raw liquid coconut oil

-2 TBSP Raw Coconut Aminos

-1/4 c fresh lemon juice

-dash of cayenne pepper

-fresh coriander from our garden

-3/4 cup filtered water

I blended my sauce and tossed it amongst all my vegetables and kelp noodles. My pad thai was complete.

{RAW} Gluten-Free Vegan Goji Chocolate Chip Brownies with Lucuma Ice Cream

What is Lucuma Powder?

A fine powder “made from whole Peruvian lucuma fruit that has been dried at low temperatures and milled”. It is a natural sweetener that has a caramel taste, but I also found that the lucuma ice cream reminded me of a coffee ice cream. Might just be me though!

*Vegan, Raw, Organic, Low Glycemic, Contains Beta-Carotene, Iron, Zinc, vitamin B3, Calcium, Protein

I did not have Yacón syrup so I used agave, but I only added 1 TBSP. I am not sure if this is why mine ended up a bit more frozen, but I just placed one of the containers in the fridge to defrost a bit. Then I added a scoop on top of the Goji Chocolate Chip Brownies and sprinkled with raw cacao nibs. I am out of carob powder so I only used raw cacao powder, and I used a vanilla bean instead of vanilla powder. I have made raw brownies many times, but usually the basic. It was exciting to try something a bit different with goji berries and cacao nibs. I knew that I was going to be adding my lucuma ice cream on top, but the Goji Chocolate Sauce sounds yummy for next time! I usually do not make up such a big batch either. Depending on what it is for, you may not want to make as much, or you can store in the freezer up to three months.

Ours is growing pretty quickly. It isn’t too late to start now.

We are still waiting for ours to come in as we planted a bit late to avoid our lamb from eating them, but they are growing so quickly. I need to get a photo update. We have yet to plant our snap peas.

Beans and peas are an easy raw nutritious snack that are fun to eat. We bought some peas that David and I have been enjoying and so has Zaedyn. He showed a lot of concentration and coordination when trying to get them out. With each one full of different amounts, we also used them as a fun way of counting. Tahi, rua, toru, whńĀ, rima, ono, whitu, waru, iwa, tekau. One, two, three, four, five, six, seven, eight, nine, ten. Uno, dos, tres, cuatro, cinco, seis, siete, ocho, nueve, diez.

Zaedyn is learning about being sustainable and growing his own food in a fun and positive way. I cannot wait to see how our bean teepee turns out and watching him pick fresh beans from the plant to eat. The garden provides so many wonderful opportunities to learn and care for the environment.

The Vegg & Raw Foods

I realise that a few of you might be curious as to what I have been doing with The Vegg, but I am still exploring a few ideas that I have in mind. You will have to wait and see what that might be. For now, here is a quick snapshot of our Vegan French Toast and Scrambled Veggs we made last week.

I haven’t quite decided what I think of this yet, but either way it was successful. The bowl was empty when Zaedyn and I finished. It is super easy and full of raw goodness. Plus I love raw cauliflower! Although I should use nutritional yeast more often, I don’t. I have previously used flakes and am trying the powder now. This is all about to change though.

Nutritional yeast, or nooch, will definitely become a part of my recipes and can easily be added to all sorts. Some people use it specifically for its “cheesy” flavour. As with meat and eggs, I am not a vegan that misses cheese; however, I can see the possibilities of using this as a “cheesy” flavour. I have been recreating a few dishes hoping to come across some new ideas for David as we both get stuck on our favourites. Not sure if the cauliflower popcorn will appeal to him, but I have a few new ideas on how to use nutritional yeast.

This idea of cauliflower “popcorn” began with Pinterest, and I searched quickly online to see what recipes were out there. I didn’t really follow any specific one as they are all pretty similar with the idea of oil, nutritional yeast, and spices. I chose to be different and use cayenne pepper which is high in vitamin A as well as containing B6, vitamin E, vitamin C, riboflavin, potassium, manganese, and capsaicin. If you do not want it spicy, you can use your favourite herbs or spices to make different flavours. We usually have avocado oil which is what I used, but you could substitute the oil for your choice as well. There isn’t a specific recipe, but more like guidelines, as it truly is versatile. To make it “cheesier” add more nutritional yeast. All you do is shake it up and eat. It really is that simple. If you do not want to eat it raw, you can also put this in a dehydrator. Just remember to buy nutritional yeast that is vegan and is fortified with B12. The nutritional yeast I bought has naturally produced B2 and B12 during fermentation, along with added B2 and B12 before the drying process as well as B1, B6, niacin, and folic acid. Now you see why I am happy that Zaedyn was eating it. I know that he was getting lots of beneficial nutrients.

Zaedyn tried to help me shake the “popcorn” up, but the container was a bit too heavy. He instantly examined it and tried a piece as soon as the lid was off. I love to see his curiosity and his willingness to try new things. He loved it! After moving from the ground to the table, he ate some more before taking it outside along with our paw paw smoothie. Kai was pretty curious as well! This will be another nutritious snack to remember.

Happy Vegan Thanksgiving

What a beautiful way to celebrate Thanksgiving with sunflowers. I really appreciate being given these. Of course, I think everyone celebrating with sunflowers would be a much better Thanksgiving tradition!

Sunflowers are useful in many different ways. I am sure Zaedyn would love planting some and watching them grow. It is amazing how tall some of them grow. They would quickly pass him! Besides having beautiful flowers, sunflower seeds are yummy and very nutritious. Did you know that you can actually save the seeds and replant them once they have dried out? Have you ever tried to grow sunflower sprouts? Yum! I can think of many ways to use sunflower seeds.

So we decided to celebrate Thanksgiving by ordering lots, I mean HEAPS, of Raw & Living Foods from Living Foods Lifestyle New Zealand and Revolution Food Company. Okay so not exactly the reason, but I suppose I can use Thanksgiving as an excuse for my latest purchases. Yes, Irish Moss was one of those items so I will definitely be making some Raw Vegan Lemon Meringue Pie. I always seem to get carried away, but there was even more that I could have purchased. I definitely restocked a few items that I needed and added a few things that I am excited to try for the first time. Has anyone tried Pili nuts? I would love to try them, but I could not afford them after everything else I found. Let me know what you think of them and hopefully I can try them at some point. Oh, and I even bought Sunflower Lecithin. See, sunflowers really are versatile. Anyways, once I get my orders you can expect to see some exciting raw food being created.

Detoxify, Re-mineralize, Energise

Sole ~ Leave crystal rock in fresh water for at least an hour

Add 2 Tablespoons Sole, 2 Tablespoons lemon juice, & 2 Tablespoons Agave Nectar to 12 oz fresh water. Fill to 16 oz with frozen strawberries & blend.

I have not made this in a very long time, but I have been thinking about it through researching ways to use my fresh mint and coming across some yummy looking virgin mojitos which I have yet to make. The original recipe I Am Sassy Virgin Margarita comes from I Am Grateful:Recipes & Lifestyle of Cafe Gratitude by Terces Engelhart with Orchid, but as I didn’t have any ice in the freezer, I adjusted the recipe adding frozen strawberries instead.

*Water can be substituted with watermelon or cucumber juice, ice instead of frozen strawberries, other frozen fruit, or anything else you desire.

Pour & add fresh mint leaves for a yummy raw vegan virgin strawberry margarita

I highly recommend placing Himalayan Crystal Salt under running water to your bath for overall wellness and detoxification. Lotus recommends this to provide relief for eczema, psoriasis, rashes, bites, sprains, strains, and as a saline wound wash, remembering to drink plenty of water before and after. I used to love making Himalayan Crystal Salt Baths just because, but I also found it very relaxing after Zaedyn’s birth. I loved having that time to go and soak in the bath and know how amazing it was for my body. From food to baths to margaritas ~ what a wonderful product to stock in your pantry. No wonder Himalayan Crystal Salt is thought to be mother nature’s true electrolyte and an amazing 250 million year old miracle of nature.
