Raw Vegan Desserts

Life is pretty busy with two little ones, but at the start of this year I had decided to somehow squeeze in time to start exploring again with raw desserts. I have always loved exploring in the kitchen and really developed an interest in raw desserts when I first went vegan. Besides loving sweets, the raw desserts just looked so appealing and vibrant. The challenge of creating these decadent desserts without any “typical” ingredients was also exciting and seemed to intrigue me.

Once you begin making and eating raw desserts, anything seems possible! Many of them even have similar ingredients, but are very adaptable to adjust flavours and create something entirely different. Raw desserts are pure energy and happiness. Here are a few raw desserts that I have been playing around with, and I cannot wait to make some of my favourites again; especially raw vegan cheesecake!

Yes, these are raw vegan desserts! Crazy enough, I actually had to use a hand food processor to create these as well which is why they are not perfect, but definitely made with love. Unfortunately the hand food processor is now out of action so I will need to come across one to continue making and sharing my raw desserts. I am truly grateful that I was given some raw ingredients to play around with as well as having some happy taste testers. Sesame Kale with Hempseed Oil

As you know, I am not the best person to ask for recipes. I really do find it easy to just throw everything together. Plus, we use up bits and pieces, and most fruit and veggies are never going to be the same size. The night before I made up some veggies and cashews with rice. Oh, and we actually added in some “chicken-type” nuggets as well. Even a photo can sometimes be a bit of inspiration though.

How do you eat kale?

I seem to think that kale is mostly eaten as kale chips as well as in green smoothies or salads. When we were in California, I would eat kale as a gluten-free option under tempeh or as a side at The Veggie Grill.

Often people seem to either really like or dislike kale. I have to admit, I was a bit uncertain when I had tried it a few years ago. Everyone seemed to love it, and I suppose I was a bit mixed and still making my mind up. This was before I really knew much about kale chips and enjoyed it at The Veggie Grill, but I never seemed to make it at home. Now all that has changed. I suppose you tend to like it more and more as you try it in various ways.

This was a super simple meal. I only had a few veggies and cashews from the night before, and I loved the sesame kale I had made for the chickpea burgers so I decided to combine the two. I tossed the kale with a bit of raw hempseed oil and sesame seeds. Super simple, and another great way to get some greens. Not my typical way to eat kale, but it was yummy. I could definitely eat this again and even change up the veggies or nuts and seeds.

Kale really is super versatile 🙂

Yes, that is vegan “cheese”. Not something we often have, but we thought we might make some gluten-free vegan pizzas. We are currently sprouting chickpeas for raw hummus, and we were back to experimenting with our juicer yesterday using pineapple, celery, kale, and juicing beets. I wasn’t really sure what Zaedyn would think of it, but of course he loved it!

There are many ways to eat quinoa. We ate it with vegetables as we needed to make a pumpkin puree for our cookies. You can eat it in place of rice as a variety of side dishes, make vegan quinoa sushi, mix with kale or other greens, use in baking, or mixed with avocado. Quinoa can easily be added to almost any meal. We made some up and had leftovers in the fridge to add to all of our meals for protein and nutrition.

You can buy quinoa as a grain or mixed grain, quinoa cereal, and even quinoa puffs.

Roasted Vegetable Salad & Pumpkin Cookies

Rosemary for coughing? I recently read somewhere that rosemary is a good herb to eat if you have a cough and had just been talking with a good friend about her beautifully fast growing rosemary plant. Zaedyn started coughing a bit yesterday. I was hoping it would not come to anything, but I thought I would get some rosemary to give him just in case.

Zaedyn tasted a fresh rosemary leaf, but ended up falling asleep before dinner was ready as he was too tired from a busy day. At least I ended up with this yummy roast vegetable salad with fresh rosemary for dinner. Lucky enough, there was heaps leftover which we were able to enjoy for lunch today. Zaedyn doesn’t seem to be coughing today, but I don’t think that I can put it down to the rosemary. At least I know what to use next time any of us have a cough. Has anyone else ever eaten rosemary as a natural remedy for coughing or tried rosemary oil?

I prefer to eat most vegetables raw and know that they are better for us that way, but there were a couple reasons that I decided to make this salad. When we were in Rarotonga in January, one of the restaurants made me a special meal one night which was a variety of roasted vegetables and hummus. It was so yummy, and I would have gone back again if we weren’t at the end of our trip. A few months ago, I decided to make my own creation with courgettes, pumpkin, onion, capsicum, kumara, and cashews over mixed greens with capsicum hummus. It was delicious! Zaedyn was pretty excited as well, however, he was only eating the hummus by the spoonful which he often likes to do. Also, I did not give him any cashews.

When thinking of how to use rosemary last night, I thought that this salad would be perfect. This time I made kumara with fresh rosemary, pumpkin, capsicum, and onion on top of spinach leaves. I could not decide which nuts to use so I ended up with a combination of cashews, walnuts, and pine nuts. Again, this was absolutely delicious.

About a week ago, I saw a photo of some pumpkin cookies from the Lunchbox Bunch. I really wanted to try them and actually ended up making my own version which is super yummy. Zaedyn and I made them today for David’s birthday with the extra pumpkin we cooked alongside our veggies last night. Our own pumpkin puree with yummy and healthy ingredients. I would definitely make these again.

Vegan Pumpkin Cookies

Dry Ingredients:
~1 1/4 cups organic rolled oats
~3/4 cup rice flour
~1/2 cup LSA (linseed, sunflower, almond)
~1/2 cup raw sugar *optional
~1 tsp cinnamon
~1 TBSP baking powder

Wet Ingredients:
~1/3 c water + 2 tsp chia seeds
~1/2 tsp vanilla extract
~1 cup homemade pumpkin puree
~1 tsp raw organic apple cider vinegar
~2 TBSP melted coconut oil

Mix wet into dry ingredients and add in:
~3/4 cup chopped walnuts
~1 cup chocolate

Dough can be chilled or cooked straight away for 12 minutes at 190 degrees Celsius.
